Life in Newcastle just got hotter with the opening of Newy Fried Chicken at The Newcastle Hotel.
Now open for dine-in and takeaway, Newy Fried Chicken is the latest offering from founder and resident ‘Fryguy’ Nic Brady, who is the culinary mastermind behind the successful Philadelphian-style sandwich pop-up, Hotline Hoagies, which operated in the space from March 2018 to May this year.
Nic says Newy Fried Chicken is inspired by the sweet and spicy southern flavours of Nashville, Tennessee.
“All great foods have a story. Like hoagies, fried chicken is working-class comfort food with a long history of being enjoyed," he said.
"We prepare every piece of chicken by hand to maintain the authentic texture and flavour and pay respect to the recipe and its originators.
“Our ‘hot’ isn’t like other chain store fried chicken – ours is red hot and addictive. On the first bite you get cayenne pepper and other spices with a touch of sweetness, and then the signature burn kicks in. You’ll start sweating, feel your lips tingling, and head pumping, and then it cools off and you’ll want to hit it again,” he said.

Each piece of chicken is brined for 24 hours to develop the flavour, before being smothered in rich buttermilk, twice dusted with flour, and fried until perfectly golden, then finished with a generous coating of signature Nashville sauce. The customer gets to choose from one of four levels of heat: southern, medium, hot, and extra hot.
The menu includes succulent Fried Chicken Tenders, Drumsticks and Wings, the house-special Fried Chicken Sandos, and sides including Crinkle Cut Fries, Sweet Vinegar Slaw, Potato Salad, and the ultimate ‘Frankenfood’ Mac & Cheese Waffle.
And like the food offerings at many pubs around Newcastle and the Hunter, Newy Fried Chicken has been designed to suit the whole family.
"There are flavoursome mild and vegan options, including Mini Chicken Sandos and Chicken Tenders for kids, and vegan options including Fried Cauliflower and the Fried Cauliflower Sando with vegan slaw and
vegan comeback sauce," Nic said.
